A good thing about autumn are the seasonal vegetables. Squash, cauliflower, broccoli, red beet…the list is long. As I think, it’s the season for a really underrated vegetable as well: parsnips. I’m a big fan. In case you don’t know them yet, they look like white carrots and taste a bit sweet.
Sweet potato fries are a nice variety to classic french fries, but already pretty common. When I read about parsnip fries, I thought that sounds even more spectacular. Today after work I decided to try it today for dinner and bought parsnips. Just to be sure, I mixed it with a sweet potato.
The preparation is pretty easy, only the baking process needs some time.
For 2 persons you need:
- 4 parsnips
- 1 sweet potato
- olive oil
- chili flakes
- salt and pepper
Preheat the oven to 180 degree (fan) and chop the parsnips and the peeled sweet potato into long thin pieces. Place them on a baking tray, drizzle them with olive oil and spice everything with chili, salt and pepper. Roast them for 30-40 minutes. That’s it. Pretty easy.
I enjoyed them together with hummus. Best combination ever. Guacamole or Baba Ganoush (grilled aubergines with tahin) are perfect dips as well.
