#day4 – salty topping for my favorite chocolate cake

No birthday without my special chocolate cake. Since I can remember my mother baked this cake for my birthday party and everyone loved it. After moving to Berlin I started to bake this cake by myself, once a year as a gift for myself. It’s a recipe for a whole baking tray, so I usally share it with my colleagues. They’re meanwhile in love as well and looking forward to my next birthday exactly after finnishing the last piece.

Because this cake is nonswitched with tradition I usally don’t like testing for the recipe, but this year I saw a just wonderful looking topping on another food blog and couldn’t persist. Caramel cremé with salted nuts, pretzel and sea salt – can you imagine? Sweet meets salty so to speak. It sounded like the perfect combination for me and it was exactly like that. I changed the original recipe a bit, to make it even more special. Today we ate the last pieces in the office. In a strict sense I tried this cake already on friday for the first time (shit, I’m already cheating a bit on the 4th day), but it’s so delicious that I have to share it with you. Today I was as surprised as I was on Friday how tasty it is, it still counts as a first time.

the sweet chocolate cake

  • 250 g margarine
  • 350 g sugar
  • 4 eggs
  • 1 package vanilla sugar
  • 1 cup creme fraiche
  • 250 g flour
  • 1 teaspoon natron
  • 50 g cacao

Preheat the oven (air circulation 150 degree). Use backing paper for the baking tray or oil the tray with butter. Mix margarine and sugar first. Add the 4 eggs, vanilla sugar and creme fraiche. Mix the flour and the natron in a separate bowl and add it with the cacao to the sugar-egg-mix. Place the paste on the baking tray and bake it for 20 minutes. Natron is really important for a perfect consistency, otherwise it won’t get fluffy.

the salty caramell toppin

  • 200 g caramel cremé
  • 200 g white chocolate (or peanut butter)
  • 80 g little salty prezels
  • 150 g salted nuts
  • a bit sea salt

Melt the caramel cremé and the white chocolate, mix it and pour it over the chilled cake. Sprinkle it with the prezels, nuts and sea salt. Let it cool down for the night.
